1 tbsp broken wheat (dalia) , washed and drained
1 tbsp rice (chawal) , washed and drained
2 tbsp chopped capsicum
1/4 cup chopped spinach (palak)
1/4 cup chopped cauliflower florets
1/2 tsp ghee
a pinch of cumin seeds (jeera)
a pinch of asafoetida (hing)
a pinch of turmeric powder (haldi)
restricted quantity of salt
freshly ground black pepper (kalimirch) to taste

For Serving With Vegetable Dalia Khichdi For Babies and Toddlers
fresh curd (dahi) , preferably made with cow’s

Method


For vegetable dalia khichdi

  1. To make vegetable dalia khichdi for babies and toddlers, heat the ghee in a pressure cooker and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, turmeric powder, broken wheat, rice and all the vegetables and sauté on a medium flame for 1 to 2 minutes.
  3. Add approx. ¾ cup of water, salt and pepper, mix well and pressure cook for 3 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Serve the vegetable dalia khichdi for babies and toddlers lukewarm with fresh curds.

    2 tbsprice (chawal), washed and drained

    1black peppercorn (kalimirch)

    1. Heat the ghee in a pressure cooker and add the cumin seeds.
    2. When the seeds crackle, add the asafoetida, clove, peppercorn, bottle gourd, carrot, green moong dal, rice, turmeric powder and 1¼ cups of water, mix well and pressure cook for 3 whistles.
    3. Allow the steam to escape before opening the lid.
    4. When it is done, remove the peppercorn and clove. Mash the khichdi a little with the back of a spoon.
    5. Serve lukewarm with fresh curds.

    1 tbsprice (chawal)
    1/8 tspturmeric powder (haldi)
    1/2 tspghee

    1. Wash and soak the green moong dal and rice in enough water for 15 minutes. Drain and keep aside.
    2. Combine the green moong dal, rice, turmeric powder and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
    3. Allow the steam to escape before opening the lid.
    4. Mash the khichdi very well using a potato masher.
    5. Add the ghee and mix well.
    6. Serve themoong dal khichdi for babieslukewarm.

    1/4 cupfinelychopped cabbage
    2 tbspgreen moong dal (split green gram), washed and drained
    2 tbsprice (chawal), washed and drained
    1/2 tspghee
    1/4 tspcumin seeds (jeera)

    1. Combine the rice, moong dal and 1 cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.
    2. Allow the steam to escape before opening the lid.
    3. Heat the ghee in a broad non-stick pan and add the cumin seeds.
    4. When the cumin seeds crackle, add the asafoetida and sauté on a medium flame for 5 seconds.
    5. Add the cabbage and sauté on a medium flame for 2 to 3 minutes or till the cabbage turns soft.
    6. Add the cooked dal-rice mixture, turmeric powder and salt, mix well and cook on a medium flame for 1 minute.
    7. Cool slightly and serve lukewarm.
