It’s just, when I was a kid, if it had any kind offruits in it, I did not think it qualified as a dessert. Then, as an adult, I realized that I was so not friggin’ right—and that if I simply tweaked said fruit recipe, let’s say, an apple crisp—that I could make it exactly how I liked it.

Stir

Stir together all of the healthy apple crisp filling ingredients in a large bowl: apples, coconut sugar, maple syrup, almond flour, spices, vanilla and water. Mix all ingredients together until apples are fully coated.

Pour

Pour the yummy apple crisp filling into a prepared baking pan.

Top

Now, stir together all healthy apple crisp topping ingredients in a small mixing bowl: nuts, coconut, oats, flaxseed, coconut sugar, coconut oil and maple syrup. Sprinkle this topping over the apple filling.

Bake

Bake your apple crisp for about 45 minutes, until the crisp topping is a deep golden brown and the liquid in the apple filling is thickened.

Ahh… apples, the star of the show! When developing this recipe, I made sure to use ingredients that only highlighted the delicious, nutritious flavor of apples. You’ll enjoy 4 whole cups of apples in today’s healthy apple crisp recipe. With just 1 medium apple [1], you can expect 4 grams of fiber, 14% of the RDI (reference daily intake) of Vitamin C and 2-6% of nutrients including potassium, Vitamin K, manganese, copper and more.

Healthy Apple Crisp Filling

  • 4 cups apple slices, peeled and thinly sliced* (about 3 medium apples)
  • 2 tablespoons coconut sugar
  • 1 tablespoon pure maple syrup
  • 1 tablespoon blanched almond flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon pure vanilla extract
  • 13 tablespoons water (optional)

Healthy Crisp Topping

  • ¾ cup nuts, chopped
  • ½ cup unsweetened coconut chips
  • ¼ cup gluten free rolled oats
  • 2 tablespoons golden ground flaxseed
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt (optional)
  • 1 ½ teaspoons coconut sugar
  • 1 tablespoon melted coconut oil
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat oven to 350°F. Grease an 8-inch square baking pan with coconut oil. This is the pan I used. Set aside.
  2. In a large bowl, add all Apple Crisp Filling ingredients: apples, coconut sugar, maple syrup, almond flour, cinnamon, nutmeg and vanilla extract. Using a rubber spatula, stir and fold until apples are fully coated and sugar mostly has dissolved. If your mixture isn’t very wet, add in water—you’ll want to see 1-2 tablespoons liquid at the bottom of your mixing bowl. I used 2 ½ tablespoons water in mine.
  3. Pour this mixture into the prepared baking pan. Use the spatula to smooth apples into an even layer.
  4. Add all Healthy Crisp Topping ingredients to a small bowl. Using a fork, stir and fold until well mixed. Pour topping evenly over apples. Once evenly spread, press down and pack the topping down firmly onto the apples—this will create a crispy, cohesive layer of topping.
  5. Bake for 40-60 minutes. Mine took 45 minutes. It’s done when the topping is a deep golden brown and the juice around the filling has thickened. To test, use a spoon to carefully lift up a corner of the crisp to see the juices. If it’s still watery, bake for another 5 minutes.
  6. Allow to cool for 10-15 mins. Serve warm with a scoop of dairy-free ice cream on top. Enjoy! Storing instructions below.
