We love Instant Pot Loaded Baked Potato Soup Recipe but I wanted something that was low carb. Since we all love this Easy Cheesy Cauliflower Recipe, I thought I would tryinstant pot cauliflower soup.

The results were fantastic. Everyone agreed the soup was delicious and the texture is just so creamy and tasty. It is the perfect soup to enjoy year round because it isn’t too heavy. You are going to love it!

The best Cauliflower Soup:

This cauliflower soup is creamy and delicious. It has all the comforting flavors that you find in a normal potato soup but low carb. We love this recipe as you can add different toppings to add in some extra flavoring.

Since this is made in the instant pot it makes for a quick and easy dinner. We love that it has so much flavor and has become a family favorite meal. In about 30 minutes from start to finish, we have dinner on the table.

Meatless Monday:

This cauliflower soup is great meal to serve on meatless Monday. I tried to at least once a week to help with our food budget, to fix a meal that doesn’t have meat.

This soup is perfect to feed my large family as the ingredients are frugal and my kids don’t miss not having meat.

Dinner time is much easier and less complicated now that I have the pressure cooker. If you are hesitant or on the fence, don’t be. You will love it!

You can also make this meal in the slow cooker if you prefer.

This soup is the perfect soup to have if you have any dietary restrictions. Even though this soup fits into my specific diet restrictions, my kids will eat it too.

  • Gluten Free – This soup is naturally Gluten Free
  • Are you on a Low Carb Diet? This is a low cab recipe option. Just be sure to check labels and what you top your soup with.
  • If you prefer it to not use the chicken broth, just use vegetable broth instead.

  • Fresh Cauliflower florets
  • Minced Garlic
  • Chicken Broth
  • Heavy Cream
  • Cheddar Cheese
  • Salt and Pepper
  • Bacon
  • Green Onion

How to make Instant Pot Cauliflower Soup:

This soup comes together in just minutes and is super easy to prepare.

  • Chop the head of cauliflower into chunks.
  • Add the cauliflower pieces in the bottom of the pressure cooker.
  • Season with salt, pepper, onions and garlic.
  • Pour the broth on top.

  • Add the lid and set the valve to sealing.
  • Set to pressure to high pressure for 8 minutes
  • Do a quick release to release the pressure
  • The soup has a really creamy texture and this is achieved by eithera hand mixer or immersion blender. This helps to puree the soup.
  • Last, pour in the heavy cream and all of that cheese. Yum!
  • Blend the soup until everything is melted and delicious.
  • We love to top our bowl of soup with crumbled bacon, more cheese and green onions.

We love a creamy cauliflower soup. To achieve this I recommend using an immersion blender to blend or a hand mixer. Adding in some cream cheese mixed with the chicken broth allows all the ingredients to thicken up.

The heavy cream really helps for the ingredients to mix well together resulting in the best creamy soup.

How to thicken Cauliflower Soup?

The measurements for the ingredients that are listed, results in a thick cauliflower soup. If you want it a bit thicker, you can reduce the chicken broth. This will help reach that thicker consistency.

If you want it a little thinner, just add in more broth before blending.

I don’t recommend freezing this soup due to the dairy separating in the process. It is best eaten fresh or within a few days of being refrigerated.

  • 1 medium size head fresh cauliflower
  • 2 teaspoon minced garlic
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3 cups grated cheddar cheese
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 6 sliced bacon cooked until crisp and diced
  • 3 green onions sliced

Instructions

  • Chop the cauliflower into chunks.
